Moon Festival 2008

Chinese Lunar New Year, celebrate the end of the summer harvesting season, when the moon is at its fullest and brightest, to celebrate the abundance of the summer's harvest .
The traditional food of this festival is the mooncake, of which there are many different varieties. Children carrying brightly lit lanterns and eat lot of mooncake

It ' s really fun and I was enjoy baking all these Asian sweet mooncake !

Harvest time

Zucchini Muffin

250g Zucchini , shred

300g sugar

315g flour

30g grind flax seed meal

250g oil

5g/ 1/2 tsp baking soda

1/2 tsp salt

3 egg

180 ml milk

10g / 2 tsp baking powder

1/8 tsp cinnamon

1/8 tsp nutmeg

1/8 tsp ginger

Add sugar in Zucchini , beat egg mix with all the rest ingredients , fold in Zucchini mixture

bake at 350-375F
